Mustard Oil is a versatile oil which is prepared from the Mustard Seeds. It is used for both medicinal and cooking purpose.

Mustard Oil also lends itself well to infusion with other herbs and spices, making it to produce a number of oils that are ideal for cooking and for medicinal use.

Mustard Oil is often used for cooking in Uttar Pradesh. Gujarat, Orissa, and other areas of India. As this oil has a strong sinus irritating aroma, a hot nutty taste so in India it is often heated almost to smoking before it is used for cooking this may be an attempt to reduce the strong smell and taste. In Northern India Mustard Oil is also used for external use. It is widely used in massages and is thought to improve blood circulation, muscular development and skin texture.

The original form of mustard containing erucic acid in the oil and hot-tasting glucinosolates in the meal left after the oil is removed from the seed.
